Taking on this week with our Quinoa Stuffed Peppers 😋

This recipe is loaded with flavor!! 
👉 Filled with savory onions and mushrooms
👉 Packing a ton of flavor from tomato Sauce, garlic, and Cumin
👉 Topped with nutritional yeast, giving it a cheese-like flavor!

✨Check out the recipe below ✨

Ingredients:
-  3-4 Bell Peppers
- 1 cup Quinoa
- 1/2 to 1 cup diced Mushrooms
- 1 Medium diced Onion
-  1 to 2 Cups Tomato Sauce
- 1 Tbsp Olive Oil
- 1 to 2 Tbsp Nutritional Yeast
- 1 tsp Garlic
- 1 tsp Cumin 
- Cayenne (optional)
- 2 cups water

Directions:
-  Preheat Oven to 350 degrees
- Bring 2 cups of water to a boil
- Add 1 cup dry Quinoa to boiling water and lower heat
- Cover Quinoa and cook for 12-15 minutes 
- Cut tops of peppers and remove seeds and flesh
-  Sauteé Onions and Mushrooms in Olive Oil until Onions are translucent and Mushrooms are soft
- Add Tomato Sauce, Garlic, and Cumin to the pan 
- Cook for 4-5 minutes (keep an eye on it)
-  Add Quinoa to pan and mix
-  Place Peppers into a muffin pan (keeps the peppers in place)
- Take mixture of Onions, Mushrooms, Tomato Sauce, and Quinoa and place into Peppers
- Sprinkle Nutritional Yeast on top 
- Place Peppers into oven and cook for 20-25 minutes
- Remove from oven and enjoy!! 🙌
