These pistachio balls take center stage when it comes to a recipe that's packed with sweet and savory flavor 😍

✨ A crunchy outside with a gooey sweet center ✨  YUM!

👉 Eat them as a snack, on the go, or even save for late️r 👍

Most importantly, have fun with this recipe! 🤗


💚 Ingredients: 
- 1/2 cup of almond butter 
- 1 cup of oats
- 3/4 cup of pistachio
- 2 Tbsp ground flaxseed
- 1 cup of pitted dates
- 1/4 coconut flakes
- 1/3 cup of dark chocolate chips
- 2 Tbsp warm water


💚 Directions:
- Add only 1/4 of pistachios to the food processor and pulse until pistachios are chopped up
- Add only 1 Tbsp ground flaxseed to processor and pulse with pistachios for 5-10 seconds
- Pour this mixture onto a plate, and set it aside as it will be used for the outside coating of the balls
-  Add the remaining ingredients to the food processor and blend until the consistency can be rolled into a ball
- Place mixture onto the clean and empty surface and begin rolling into ball size pieces 
- Then roll the balls in the coating mixture and place on another dish for eating or saving for later 
- And that’s it! All that's left to do is enjoy!! 😋

Taking on this week with our Quinoa Stuffed Peppers 😋

This recipe is loaded with flavor!! 
👉 Filled with savory onions and mushrooms
👉 Packing a ton of flavor from tomato Sauce, garlic, and Cumin
👉 Topped with nutritional yeast, giving it a cheese-like flavor!

✨Check out the recipe below ✨

Ingredients:
-  3-4 Bell Peppers
- 1 cup Quinoa
- 1/2 to 1 cup diced Mushrooms
- 1 Medium diced Onion
-  1 to 2 Cups Tomato Sauce
- 1 Tbsp Olive Oil
- 1 to 2 Tbsp Nutritional Yeast
- 1 tsp Garlic
- 1 tsp Cumin 
- Cayenne (optional)
- 2 cups water

Directions:
-  Preheat Oven to 350 degrees
- Bring 2 cups of water to a boil
- Add 1 cup dry Quinoa to boiling water and lower heat
- Cover Quinoa and cook for 12-15 minutes 
- Cut tops of peppers and remove seeds and flesh
-  Sauteé Onions and Mushrooms in Olive Oil until Onions are translucent and Mushrooms are soft
- Add Tomato Sauce, Garlic, and Cumin to the pan 
- Cook for 4-5 minutes (keep an eye on it)
-  Add Quinoa to pan and mix
-  Place Peppers into a muffin pan (keeps the peppers in place)
- Take mixture of Onions, Mushrooms, Tomato Sauce, and Quinoa and place into Peppers
- Sprinkle Nutritional Yeast on top 
- Place Peppers into oven and cook for 20-25 minutes
- Remove from oven and enjoy!! 🙌

1 Acorn Squash

1/2 Cup Apple Cider Vinegar

1 Tablespoon Orange Marmalade

1 Pinch Ground Clove

👉 Quick and Easy Lentil Tacos⠀⁠

INGREDIENTS: 
1 1/2 cups lentils
1/2 red onion finely chopped
1/2 cup cherry tomato diced
1 green chili diced (Optional)
2 tsp ground cumin
1 1/2 tsp chipotle powder
1 tsp paprika
Tumeric
1 tsp salt
1 tsp pepper
3 Tbsp chopped fresh cilantro 
1 head of lettuce for wraps

Steps:
Cook the lentils. 

Combine the lentils in a saucepan with 3 cups of water (or veggie broth) and
stir to combine. 

Cook over medium-high heat until the broth reaches a simmer. Then reduce
heat to medium-low, cover and maintain the simmer until the lentils are tender, about 20-25 minutes depending on the type of lentils used. 

Use a strainer to drain and rinse the lentils in cold water for 1 minute until they are chilled, and set aside. 

Season lentils and begin Preparing lettuce wraps and toppings. 

Dice the tomatoes and chilies, mince garlic. 

Scoop lentils into the wrap and add toppings, finish off with lime juice and enjoy. 

This one is a fun one and perfect for any gathering. Its a great way to get your taco fix all while putting a healthy spin on it.😁😁😁⠀

💚 Ingredients
about 2 cups of sliced mushrooms
4 large zucchinis
1/2 of an onion
3/4 cup of Greek yogurt
2 cloves of garlic
2 tbsp thyme
1/3 cup of parmesan cheese
1 tbsp extra virgin olive oil


💚 Directions
- Using a knife, carefully cut the zucchini into ribbons and place it into a colander 
- Chop the onion to your preference 
- Heat the olive oil in a large sauté pan and add the mushrooms, garlic, and onions 
- Mix ingredients in the pan together and sauté until mushrooms and onions are soft 
- Then add thyme and salt + pepper to taste and mix everything together
- Add the greek yogurt and parmesan cheese to the mixture, making sure to coat all of the ingredients
- Finally, add the ribboned zucchini to the pan and fold it into the mixture
- Continue to cook for about 5-10 minutes (longer if desired)
- Add to a plate and sprinkle with parmesan and WAHLA! Enjoy!

‎We got a delicious recipe for you to try!⠀
 
👉Healthy Chocolate Covered Banana Popsicles!⠀

INGREDIENTS: 
3 Bananas frozen ( cut in half)
2 Cups Chocolate Chips
Popsicle Sticks
Ground Cinnamon

Option toppings: 
Toasted Coconut flakes 
Crushed Hazelnuts
Crushed Freeze Dried Berries
Coarse Sea Salt

Steps:
1.Cut ripe bananas in half widthwise.

2.Insert a popsicle stick in the bottom, leaving plenty of room for your hand to hold.

3.Place bananas on a baking sheet lined with parchment or a silicone baking mat and freeze at least 2-3 hours, up to overnight.
4.When you’re ready to dip the bananas, set out any desired toppings so your station is ready to go.

5.Prepare your chocolate shell by melting chocolate chips and coconut oil together in a saucepan over low heat until silky smooth.

6.Pour the melted chocolate mixture into a narrow glass (like a juice glass!).

7.Dip the frozen bananas into the chocolate mixture + immediately sprinkle with any desired toppings.

8.Place back on the baking sheet + repeat with remaining bananas.

9.Pop the bananas back into the freezer for a few minutes to harden, then transfer any that you’re not eating immediately to a freezer-safe bag and store in the freezer.

👉 Quick & Easy Healthy Banana Chip Recipe⠀⁠

INGREDIENTS: 
○ 3 Bananas
○ 1/2 Lemon, juiced
○ Ground Cinnamon,

Steps:
1. Preheat your oven on 100°C / 250°F and line one (or two if needed) flat baking tray with baking paper or a baking mat.

2. Cut the Bananas into thin slices (1) and place them on the baking tray. Leave room between each slice.

3. Juice the Lemon and brush it over each slice. Turn the slices around and brush the other side.

4. Optional: sprinkle some Ground Cinnamon over the slices, using a small sieve or sifter to avoid lumps.
5. Bake in the oven for 1 hour or until the Bananas Slices can be flipped over (2). Turn each slice and bake for an additional 30 minutes (3).

6. Leave to cool down then transfer into an air-tight container.

Notes
1. I cut the bananas to a thickness of about 5mm / 0.2 inches. 

You can cut them thicker if preferred but they will need to bake longer. If cut thinner, I have found that they will break more easily.

2. If the bananas seem to be falling apart / turn too mush when you try to flip them, it means that they are not baked enough. The slices may stick to the baking paper – if it is the case, use a small sharp knife to lift up a side. 

They should then come off easily.

Also note that the cooler they get, the easier they will be to flip around as they harden.

3. Bake less or more the second time, depending on how crunchy or how chewy you want your chips to be. Note that they will harden once they cool off.

2️⃣ When the seeds have dried, begin melting the chocolate chips over a double boiler, stirring occasionally until all the chips have melted together. ( or microwave for 1 min stirring at 30 seconds) ⁠

3️⃣ While the chocolate chips are melting, roughly chop the almonds.⁠

4️⃣ Once the melted chocolate chips look nice and smooth, remove it from the heat and gently stir in the almonds and pomegranate seeds.⁠

5️⃣ Choc mixture onto a parchment lined baking sheet making a little cluster.⁠

6️⃣ Place the chocolate seed clusters into the fridge for about an hour while the chocolate sets up.⁠

7️⃣ Eat straight from fridge enjoy ⁠

➡️ This time of year, a lot of delicious treats in pastel wrappers pop up all around the grocery store, and they’re hard to resist! This recipe replaces those sugary temptations with a tasty and festive alternative that you can make right in your kitchen.
⁠⁣
⭐️ A tasty treat that will keep your springtime sweet tooth and waistline happy.⠀⁣⠀⁠⁣
⁠⁣
⁠⏺️ Ingredients⁠⁣
⁠⁣
2/3 Cup Dark Chocolate Chips

1 Tsp Coconut Oil 
⁠⁣
2 Tbsp Maple Syrup 
⁠⁣
2 Tbsp Coconut Flour 

3/4 Cup Creamy Almond Butter

⁠⁣
⁠⏺️ Instructions⁠⁣
⁠⁣
1️⃣ Add almond butter, maple syrup, and coconut flour to mixing bowl, and mix well

2️⃣ Using Easter egg shells as cookie cutters, mold almond mixture into egg shapes
⁠⁣
3️⃣ Place molded eggs in freezer for 10 minutes
⁠⁣
4️⃣ Add chocolate chips and coconut oil to microwave-safe bowl
⁠⁣
5️⃣ Place in microwave for 15-20 second increments, stirring continuously until melted 
 
6️⃣ Place parchment paper on counter and remove eggs from freezer
 
7️⃣ Coat eggs with melted chocolate and lay on parchment paper 
 
8️⃣ Return to freezer for 30-60 minutes. 
 
9️⃣ To add designs, remove eggs from freezer after 25 minutes, drizzle melted chocolate on top, and return to freezer.
